Description
Mozzarella in Brine, 3.5 kg Kaanlar is fresh mozzarella cheese served in its own brine. With its soft texture, mild milky aroma, and high moisture content, it is produced for serving raw and in fresh preparations. The 3.5 kg bucket packaging is the standard size for restaurants, hotels, and catering kitchens that prepare daily Caprese salads and antipasti.

Who is the 3.5 kg package suitable for?
A quick calculation: an average serving of caprese or antipasti uses 60–80 g of mozzarella. Based on a drained weight of 3.5 kg, this amounts to roughly 45–58 servings. For a kitchen that produces 15–20 servings a day, this represents three days’ worth of consumption.
- Restaurants with an Italian menu
- The hotel’s buffet and à la carte dining options
- Catering companies and event kitchens
- Cafes specializing in salads and antipasti
Note: For cheese in brine, the total package weight differs from the drained weight of the cheese. Please base your cost calculations on the drained weight; you can confirm this before placing your order.

- Cold dishes: caprese, antipasto platter, salad, bruschetta, sandwich
- Fresh pizza: Margherita and Neapolitan-style pizzas

What is the difference between mozzarella in water, grated mozzarella, and block mozzarella?
All three are mozzarella; what sets them apart is their moisture content, and that determines which recipe they work best in.
| Criterion | In Water | Grater | Block |
| Humidity | High | Low | Low–medium |
| Service | Raw | Baked | Both |
| Baked | Releases water | Melts evenly, stretches | Melts when grated |
| Main uses | Caprese, antipasti | Pizza, gratin, toast | Kitchen with its own grater |
| Ice Cream | Not suitable | Suitable | Suitable |
For oven-based recipes, try Kaanlar Grated Mozzarella (1 kg ) or Teksüt Grated Mozzarella (1 kg); for kitchens that grate their own cheese, try Kaanlar Mozzarella Block (1 kg). A detailed comparison of these three types can be found in our guide to mozzarella varieties.
Which type of packaging is best for which kitchen?
| Packaging | Who is it for? | Benefits |
| 3.5 kg bucket | High-volume restaurants, hotels, and catering services | Lowest cost per kilogram |
| 500 g | Medium-sized à la carte kitchen | Low fire risk |
| Mini 300 g | Boutique café, small menu | Freshness in a small package |
| 125 g × 24 | Portion serving, room service | Standard portion size, zero waste |
Is mozzarella made with water used on pizza?
Usage — This is the classic cheese for Neapolitan-style pizza. However, because of its high moisture content, adding it directly will make the dough soggy. Professional tip: Slice the cheese and let it drain in a colander for 20–30 minutes; if possible, pat it dry with paper towels, and add it in the final minutes before removing the pizza from the oven.
Since this preparation takes time during peak hours, most pizzerias switch to grated mozzarella or use a combination of both: grated mozzarella on the bottom and a few pieces of fresh mozzarella on top. You’ll find everything you need to know about the balance between oil release, browning, and melting in our pizza cheese guide.
An alternative for premium fresh presentation
Chefs looking to add a unique twist to their Caprese and antipasti platters are turning to Burrata Napoli Antica (120 g ): mozzarella on the outside, stracciatella and cream on the inside. Find out the difference and get serving suggestions in our burrata guide.

How should it be stored? Can it be frozen?
The cheese is stored in its own brine at +2 / +4 °C. Do not pour out the brine—allowing the cheese to dry out will make its texture harden and cause it to lose its flavor. After opening the package, use clean tongs to remove a portion, leave the rest in the brine, and consume it within a few days.
Freezing is not recommended. Due to its high moisture content, it releases water when it dissolves, causing the texture to break down and making it unsuitable for serving raw. If you have extra on hand, use it in baked goods instead of freezing it.
