“Mozzarella in brine” is fresh mozzarella that is left to rest in its own brine after production. It has a high moisture content; its texture is soft, milky, and slightly elastic. This is what sets it apart from grated and block mozzarella—those are products with reduced moisture content, intended for melting.

It can be used, but it’s not the right product. Because it has a high moisture content, it releases water in the oven; the pizza crust gets soggy, and the cheese doesn’t melt evenly. When used in Italian-style pizzas, it must first be sliced and drained—or even patted dry with paper towels.

How do you prepare for the service?
Two details determine the outcome on the plate: straining and temperature.
Open the package just before serving, remove the cheese from the brine, and let it drain for a few minutes—if placed directly on the plate, the brine will dilute the olive oil and make the presentation watery. Second: mozzarella straight from the refrigerator lacks flavor. Take it out 15–20 minutes before serving and let it warm up slightly; the milky aroma will only come through then.
If you’re going to slice it, use a knife with fine teeth and cut without pressing down—pressing down causes it to release its juices and fall apart.
Should the brine be discarded?
The brine in the package should be kept intact until serving; it should be drained just before serving. Removing the cheese from the brine and letting it sit in the refrigerator to dry will make its texture firmer and dry out its surface.
If you have opened the package but haven’t used all of the cheese, store it in its own brine in a sealed container. If the brine runs out, you can prepare a lightly salted water solution—using plain water will draw out the cheese’s salt and weaken its flavor.
How should it be stored? Can it be frozen?
Store at +2 / +4 °C in its brine. Follow the expiration date on the package. Consume shortly after opening.
Freezing is not recommended. Because the moisture content is high, water crystals break down the texture during freezing; when thawed, the cheese crumbles, becomes watery, and can no longer be served cold. This is what sets it apart from grated mozzarella—grated mozzarella can be frozen, but water-packed mozzarella cannot.
