How to Whip It? Practical Tips
The most common mistake made with plant-based creams is whipping them while they’re warm. Chill the container to between +4 and +7 °C before whipping; a warm product will not expand in volume. A commonly recommended practice is to chill it at least 12 hours before use; chilling the container and the whisk also helps increase the volume. Start at medium speed in the mixer and reduce the speed once the mixture begins to thicken. Over-whipping makes the texture grainy, and this cannot be reversed.
