What is labneh, and what type of cheese is it?
Labne is a fresh cheese made from strained yogurt, with roots in Middle Eastern cuisine. Straining the liquid from the yogurt (whey) increases the solids content, leaving behind a creamy, slightly tangy, and spreadable product.
This is why labneh differs from cream-based cheeses like mascarpone: it has a lower-fat, more acidic, and fresher profile. In commercial production, products vary by brand—refer to the package label for exact ingredients and nutritional values.
Who is the 2.5 kg bucket suitable for?
2.5 kg is the perfect size for kitchens that portion out labneh daily. It can be served in a bowl at a buffet, on a plate for à la carte service, as an appetizer, or as a filling in pastries—in other words, one product serves multiple purposes.
- Hotel breakfast buffet areas
- Cafes and breakfast-themed establishments
- Meze and à la carte restaurant kitchens
- Bakeries and dessert shops (cheesecake, filled pastries)
- Catering and Group Meals
For businesses that serve individual portions, Pınar Labne 20 g single-serving packs or Pınar Labne 180 g are good alternatives.
Where is labneh used?
- Breakfast: buffet bowl, breakfast plate, simit, and bread toppings
- Appetizer: Labneh dip with olive oil, mint, red pepper flakes, and garlic
- Pastry Shop: cheesecake crust, filling, tart
- Hot kitchen: sauce enrichment, vegetable stuffing, dip sauce base
- Presentation: bagel, sandwich, and canapé versions
What is the difference between labneh, cream cheese, and mascarpone?
All three are fresh, spreadable cheeses; they differ in their ingredients and fat content. These differences are directly reflected in the final result, whether in a dessert or on a plate.

Which labne is suitable for which business?
| Product | Packaging | For whom |
| Kaanlar Labne | 2.5 kg tub | Hotel buffet, café, mezze kitchen |
| Pınar Labne | 2,750 g | Menus where brand recognition is important |
| Teksüt Labne | 2,750 g | Alternative sourcing, cost balance |
| Master Chef Labne | 2,750 g | High-volume bulk service |
| Pınar Labne, individual-sized | 20 g × 120 | Room service, takeout, hygiene first |
The answer to the question “bucket or individual portions?” is simple: use a bucket if you’re serving it on a plate, and individual portions if you’re delivering it to guests in sealed containers. A bucket significantly reduces the unit cost, while individual portions eliminate waste and hygiene risks.
How many servings are in a 2.5 kg bucket?
At a buffet, an average of 25–30 g of labne is consumed per person; accordingly, a 2.5 kg bucket yields roughly 80–100 servings. Since a serving at a meze spread ranges from 60 to 80 g, the same bucket yields 30 to 40 meze plates.
For cheesecake, a 22–24 cm pan typically requires 700–900 g of fresh cheese; a 2.5 kg tub is enough for about 3 pans. To calculate the cost per serving, you can divide the current tub price listed on the page by these numbers.
Is labneh used in hot dishes?
Use with caution. Because labneh is yogurt-based and acidic, it tends to curdle at high temperatures —if added directly to a boiling sauce, it will leave a grainy texture.
The correct method: Turn down the heat, temper the labneh by adding a ladleful of the hot sauce, then return the mixture to the pot—do not bring it to a boil. Kitchens seeking more reliable results in hot applications prefer cream-based products— Tikveşli Cream 1 Lt is noticeably more stable for this purpose.
Why does labneh release water?
Since labne is strained yogurt, it is normal for some whey to separate in the container—the clear liquid that collects on top is not a sign of spoilage; when stirred, the product returns to its original consistency.
To minimize water separation during serving: portion the mixture from the bowl close to the time of serving, do not let it sit at room temperature on the plate for too long, and do not overmix—overmixing loosens the texture and increases water separation. If the product has a sour odor, a change in color, or signs of foaming, it should not be used.
How should it be stored? After opening?
Store at +2 / +4 °C, maintaining the cold chain. Follow the storage instructions and expiration date on the packaging.
After opening, close the lid of the container after each use, and never dip a dirty spoon into it —cross-contamination is the most common cause of spoilage in fresh cheeses. Do not return any portion you have scooped out into a separate container for serving back into the original container. It is recommended that you consume the opened product within a few days.
Can labneh be frozen?
Not recommended. Its yogurt-based texture separates during freezing; when thawed, it releases water and does not regain its creamy texture. This loss of texture is immediately apparent when served at breakfast or as an appetizer.
If absolutely necessary, it can be considered only for items that will be cooked (baked desserts, fillings). The right solution isn’t to freeze them, but to choose packaging and an ordering schedule that match your consumption rate.
