Description
Kiana Aged Full-Fat White Cheese is a full-fat white cheese made from cow’s milk and aged in brine. The packaging bears the label “sold by weight”; in other words, it is not sold in fixed-weight portions but is sold based on actual weight. It is produced for businesses serving breakfast platters, meze, and börek. Santral Gıda is a wholesale food supplier that has been delivering to all 39 districts of Istanbul six days a week with next-day delivery since 1995.
What is the wholesale price of Kiana aged full-fat white cheese?
The current wholesale price is 525 TL per kilogram. Since the product is sold by weight, the amount you will pay is calculated by multiplying the net weight delivered by 525 TL. The price excludes VAT and may vary depending on the price of raw milk; please obtain written confirmation from our sales representative before placing your order.
What does “aged” white cheese mean?
Aging is the process of allowing fresh curd to rest in brine at a specific temperature for months. During this process, the proteins and fats in the cheese break down partially; the texture becomes creamier, the flavor becomes more pronounced, the “raw milk” odor disappears, and the cheese develops a firm cut that doesn’t crumble when sliced. Fresh white cheese does not undergo this process; its flavor is milder, and its texture is more crumbly.
What is the difference between aged and fresh white cheese?
| Feature | Aged (Kiana) | Fresh white cheese |
|---|---|---|

| Texture | Creamy, doesn’t crumble when sliced | Crisp, crumbles |
| Flavor | Distinct, well-balanced saltiness, deep | Soft, milky |
| Breakfast Plate | Very affordable | Reasonable |
| Börek Filling | Appropriate (doesn’t run) | May remain moister |
| Shelf life | Longer | Shorter |

What is the difference between full-fat and low-fat white cheese?
Full-fat white cheese has a high fat content relative to its dry matter; it has a creamy texture, offers a more balanced perception of salt, and softens when heated. In the semi-fat product, the texture is drier and crumbly, and the saltiness is more pronounced; the cost per serving is lower. For cost-conscious breakfast services, Teksüt Semi-Fat White Cheese (17 kg ) and Teksüt Low-Fat White Cheese (500 g ) are more suitable.
What does “sold by weight” mean, and how is the order calculated?
The product’s packaging does not have a fixed weight; each piece may weigh differently. Orders are placed by the kilogram, and the net weight measured at the time of shipment is billed. For example, the total for an order delivered at 3.4 kg would be 3.4 × 525 = 1,785 TL. The same principle applies to our other cheeses sold by weight, such as Sepi Re Sardo Pecorino.
Which white cheese is the right choice for a breakfast plate?
On a breakfast plate, cheese satisfies both the eyes and the palate. Aged full-fat white cheese cuts into neat cubes without crumbling and retains its shape on the plate for hours; its flavor is distinct enough to rival that of olives, tomatoes, and honey-clotted cream. To enrich the breakfast plate, Kaanlar Lor Cheese, Anise-Seeded Basket Cheese, and Erzincan Tulum Cheese are served together.
How is it used in meze and salads?
Aged white cheese plays a role similar to feta in Mediterranean salads and meze: when crumbled, it adds salt and flavor, and when cut into cubes, it holds its shape. When marinated in olive oil, thyme, and red pepper flakes and left to rest for 24 hours, it can be served as a meze. It can be arranged on a cheese platter alongside goat cheese or Roquefort.
Is it suitable for making börek?
Yes. Because it is aged, it has a lower moisture content than fresh cheese; when melted in the oven, it does not make the dough soggy, and the börek crust remains firm. It is recommended to mix it with parsley before use. For bakeries and pastry shops producing large volumes of börek, a 50/50 mixture with ricotta cheese both reduces costs and lightens the texture.
How do you store white cheese, and what is the brine used for?
White cheese must be stored in its own brine at +2 to +8 °C, ensuring the cheese remains completely submerged in the liquid. The brine prevents mold growth by cutting off contact with oxygen and helps maintain the cheese’s salt balance, thereby preventing its texture from breaking down. If the brine level drops, it can be replenished by adding 60–70 g of salt to 1 liter of boiled and cooled water.
How can you reduce the salt content in cheese?
Sliced cheese is soaked in room-temperature drinking water for 1–3 hours to remove the salt in a controlled manner; the water is changed every 30 minutes. Soaking it for longer removes not only the salt but also the flavor and softens the texture. Cheese from which the salt has been removed should be consumed the same day.

| Erzincan tulum | Sharp, salty, spicy | Crumbles | Appetizer, raki table, pasta |
