Description
Kaanlar Baklava-Grade Clarified Butter 16 Kg is clarified butter packaged in a tin, designed for bakeries and production facilities that make baklava, börek, and other pastries. Clarified butter is butter from which water and milk solids have been removed; as a result, it can be used at high temperatures without browning and provides the desired crisp texture in baklava layers.
What is the difference between plain oil for baklava and butter?
About 15–18% of butter is water, and it contains milk protein. Since these two components are separated in clarified butter, its fat content is nearly 100 percent. The practical result is this: butter foams at high temperatures, the milk proteins burn and turn brown, and water seeps into the dough; clarified butter, on the other hand, works without browning and does not transfer water to the dough.

Who is the 16 kg can suitable for?
The 16-kg can is a production-size container designed for businesses that produce baklava and börek on a daily basis. The amount of oil used in a single tray of baklava varies depending on the recipe and tray size; this can size allows for consistent production from the same batch without having to change packaging frequently. Working with the same batch ensures that the product’s taste remains consistent from day to day.

How do you use clarified butter in baklava?
Clarified butter is used in two ways when making baklava: it is brushed between the layers of phyllo dough and poured into the bottom of the baking pan. Using the butter when it is warm and runny —rather than at room temperature—ensures it spreads evenly throughout the layers. There’s no need to overheat it; simply melting it is sufficient.
The temperature at which the syrup is poured over the baklava as it comes out of the oven also directly affects the result; the general rule is to use hot baklava with lukewarm syrup or lukewarm baklava with hot syrup. The exact ratios and times will vary depending on your recipe.
Is it used in börek and kavurma?
Yes. Clarified butter is preferred for greasing the layers of phyllo dough in su böreği, kol böreği, and tepsi böreği, as well as for sautéing meat, making pilaf, and cooking in a skillet. The reason it is preferred for sautéing is the same: it can be used at high temperatures without burning.
How should it be stored?
Store the unopened can in a cool, dry, and odor-free storage area, away from direct sunlight. Once opened, keep the lid tightly closed and use a clean, dry spoon to scoop it out; mixing in water or dough residue will cause it to spoil more quickly. Pure oil may solidify at room temperature; this is normal. Refer to the packaging label for shelf life and storage conditions.
Does clarified butter freeze? Is it a problem if it solidifies?
Pure oil may be solid or semi-fluid depending on the room temperature. This is not a defect; it is a natural occurrence caused by temperature. Before use, simply heat as much as you need to make it fluid. It is not recommended to repeatedly heat and cool the entire can.
