Description

Kaanlar Butter 1 Kg is a 1-kilogram block of butter designed for professional kitchens. It is used in pastry shops, hot food service, and breakfast service; the block format allows the kitchen to decide on weighing and portioning.

What is the wholesale price?

The price shown on the page is for a single 1-kg block. Special prices apply for purchases by the case or pallet, depending on the quantity. Restaurants, hotels, cafes, and catering businesses can request current case prices and contract supply offers via the quote form or WhatsApp. You can view the entire product line in the interactive catalog.

Who is the 1 kg block suitable for?

Block butter is intended for kitchens that use butter as an ingredient in recipes —it is weighed, melted, and whipped. Portioned butter, on the other hand, is intended for serving.

  • Pastry Shops — Production of Dough, Cream, and Ganache
  • Restaurant hot kitchens — sauces and finishing touches
  • Bakeries — croissants, buns, cookies
  • Hotel kitchens — breakfast and à la carte
  • Catering and group meals

Where is butter used?

  • Pastry Making: dough, cream, ganache, cookies
  • Hot kitchen: finishing sauces, roux, developing flavor in a sauté
  • Breakfast: plated service, served with bread
  • Local dishes: mıhlama, kuymak, pilav üstü

For kitchens preparing mıhlama, Kaanlar Kolot Cheese (500 g ) is another key ingredient in the recipe.

What is the difference between butter and clarified butter?

Clarified butter is butter from which the water and milk solids have been separated. This separation results in two benefits: it can withstand higher temperatures and has a longer shelf life at room temperature.

Why does butter brown when sautéed?

The milk solids in butter burn at high temperatures; it is these solids, not the fat, that turn brown. For this reason, butter alone is not suitable for high-heat sautéing.

Two practical solutions: mixing the butter with a little vegetable oil increases its stability; or adding the butter at the very end of cooking, after removing the dish from the heat, to enhance the flavor. Intentionally browned butter (beurre noisette), however, is a separate technique—you can read our article on brown butter for more on this topic.

Why is the temperature of butter important in pastry making?

The temperature of the butter directly determines the structure of the dough. Cold butter creates layers in flaky pastries (puff pastry, croissants); butter at room temperature traps air during creaming and gives the cake its volume.

Melted butter, on the other hand, leaves a thick and moist texture. Following the recipe’s instructions—regardless of the butter’s brand—is more important than the brand itself.

How far does a 1-kg block go?

For breakfast service, based on 10–15 g per person, a 1-kg block yields roughly 70–100 servings. In baking, however, it varies depending on the recipe: a cake may require 150–250 g, and a batch of cookies may require 200–300 g of butter.

To calculate the cost per serving, you can divide the current block price listed on the page by these numbers.

How should it be stored?

Store in the refrigerator at +2 / +4 °C. Butter absorbs odors very quickly—do not store it in the refrigerator next to onions, cheese, or spicy foods.

Do not leave the cut surface exposed; exposed butter will oxidize, darken in color, and lose its flavor. Keep it in its original packaging or transfer it to a container with a lid.

Can it be frozen?

Yes. Butter is one of the best dairy products for freezing; its texture and flavor remain largely unchanged. Freeze it in portions, wrapped tightly to keep out air.

Thaw it in the refrigerator. Thawing it quickly at room temperature will cause water to pool on the surface.
