What is Kolot cheese?
Kolot is a cheese produced in the Black Sea region, typically made from cow’s milk. Its distinctive feature is that it stretches when heated —when melted, it doesn’t run, but forms strands that wrap around a spoon.
This behavior is why this recipe depends entirely on the cheese: if the cheese doesn’t stretch, the recipe won’t work. Refer to the package label for production methods and nutritional information.
Why is kolot essential for mıhlama (kuymak)?
Mıhlama consists of three ingredients: butter, cornmeal, and stringy cheese. The dish’s distinctive character comes from the cheese’s stringy texture; if you use Kashar or Cheddar, the cheese melts, and the dish becomes simply “cornmeal with cheese.”
For a kitchen that serves mıhlama, kolot is a must-have. Kaanlar Butter (1 kg ) is another key ingredient in the same recipe.
What is the difference between Kolot and Kashar?
| Criteria | Kolot | Kashar |
| Behavior at High Temperatures | It stretches and becomes string-like | It stretches, but flows even more |
| Salt | Generally slightly salty | Distinctly salty |
| The Original Recipe | Mıhlama, Kuymak | Toast, pide, börek |
| Region | Black Sea | Thrace and the surrounding area |

Why doesn’t the cheese stretch in mıhlama?
The three most common causes: the wrong kind of cheese, too high a heat , and over-stirring. When cooked over high heat, kolot first stretches, then hardens and becomes rubbery.
A practical method: Melt the butter and toast the cornmeal; reduce the heat, add the cheese , and stir slowly in one direction. Remove from the heat as soon as the cheese starts to stretch—letting it sit too long will ruin the texture. If the cheese is too salty, soaking the slices in water for a short time will balance the flavor.
How should it be stored?
Store at +2 / +4 °C. Follow the expiration date on the package. After opening, cover the cut surface; otherwise, the cheese will dry out and lose its stretchiness.
Dried kolot does not yield the desired texture when cooked—which is why it’s important to use it up quickly once the package is opened.
Can it be frozen?
It can be frozen if it is to be used after thawing. After thawing, the texture changes slightly and its elasticity may decrease; for recipes—such as stuffed vegetables—that rely entirely on this property, fresh produce should be used.
Freeze in individual portions and thaw in the refrigerator.
