Description

TheLifeCo Organic Agave Syrup 660 g is a 100% certified organic liquid sweetener derived from the sap of the agave plant grown in Mexico. Thanks to its fluid consistency, which makes it a suitable substitute for refined sugar, it mixes easily into cold beverages and helps retain moisture in baked goods. Santral Gıda is a wholesale food supplier that has been delivering to all 39 districts of Istanbul six days a week with next-day delivery since 1995.

What is agave syrup, and how is it made?

Agave syrup is a natural sweetener obtained by filtering and concentrating the sap extracted from the stem of the agave plant, which is native to Mexico. It differs from honey—a bee product—and maple syrup—made from tree sap—in its source: agave is a plant extract. Its color ranges from light amber to dark amber; the darker varieties have a more pronounced caramel flavor.

What exactly is in this product?

The list of ingredients consists of a single line: 100% organic agave syrup. Contains no additives, preservatives, added sugar, or water. Certified under the Organic Agriculture Law No. 5262 by ORSER (TR-OT-011), authorized by the Ministry of Agriculture and Forestry of the Republic of Turkey.

What are the nutritional values, and how many calories are there?

The values per 100 g listed on the package label are as follows. The line to pay attention to is the sugar line: although agave syrup is of natural origin, it is essentially a sugar, and 80 g of every 100 g consists of sugar.

Per 100 gAmount
Energy320 kcal / 1,340 kJ
Total fat0 g
— Saturated fat0 g
Carbohydrates81 g
— Candies80 g
Fiber1 g
Protein0 g
Salt0 g

For comparison: 100 g of granulated sugar contains approximately 400 kcal. Agave syrup appears to have fewer calories because it contains water; since a smaller amount is needed to achieve the same level of sweetness, there is a difference in calories per serving in practice. This is not a health claim, but a difference in measurement.

How much of it should be used instead of refined sugar?

The manufacturer’s usage recommendation on the package is clear: in recipes, you can use ¾ measure of organic agave syrup instead of 1 measure of refined sugar. It is also recommended to lower the oven temperature by 25 °C when baking — since agave syrup caramelizes more quickly, the surface will brown prematurely at the standard temperature.

Sugar in the recipeAgave syrup substituteTo be subtracted from the liquid
100 g~75 g~20–25 ml
200 g~150 g~40–50 ml
500 g~375 g~100–125 ml
1 kg~750 g~200–250 ml

The liquid shrinkage allowance is not included in the manufacturer’s recommendations; it is a common baking practice used to compensate for the syrup’s own water content. Test a new recipe in a small batch before rolling it out to full production.

Why is it preferred in cold beverages?

This is its biggest practical advantage: granulated sugar doesn’t dissolve in cold drinks; it settles at the bottom of the glass. Since agave syrup is liquid, it mixes instantly in iced coffee, lemonade, iced tea, and cocktails. It also eliminates the step of preparing simple syrup in barista and bar operations—no boiling, cooling, or inventory tracking is required.

For maple syrup, check out our Vermont Maple Syrup product. For businesses that use the term “vegan” on their menus, agave is the most practical alternative to honey.

Where is it used?

Third-wave coffee shops use it to sweeten cold drinks and cold brew; cocktail bars use it instead of sugar syrup; bakeries use it in moist cakes and granola; cafes with vegan menus use it instead of honey; and hotels use it in individual servings alongside yogurt and fruit at breakfast. It is used in combination with WeFood Matcha Powder in drinks such as matcha lattes.

How does it behave in the oven and during cooking?

Agave syrup is hygroscopic—it absorbs moisture from the environment. In practice, this means that cakes and brownies made with agave syrup stay moister the next day than those made with refined sugar and take longer to dry out. On the other hand, it browns more quickly; for this reason, the manufacturer recommends lowering the temperature to 25 °C. In products where caramelization is desired (such as the edges of cookies), this speed becomes an advantage.

Does it crystallize? How should it be stored?

It does not crystallize like honey; this is a significant advantage for bar and service operations. According to the label , it should be stored at room temperature in a dark place —refrigeration is not necessary and is not recommended, as it causes the syrup to thicken. Once opened, keep the cap tightly closed and wipe away any residue from the bottle’s mouth. If left in the cold, its flowability decreases; soaking it in warm water will restore it to its original consistency.

When sugar is substituted, what else changes in the recipe?

Three things: reduce the total amount of liquid in the recipe (see the table above), lower the oven temperature, and the baking time may be extended by a few minutes. In recipes that use baking powder, agave’s slightly acidic nature may affect leavening; in recipes using baking soda, the ratio must be adjusted. When sweetening whipped cream and whipped cream products, agave can be used as a direct substitute—sweetened whipped cream products like Chantypak don’t require any additional sweetener anyway.

Can it be used in a vegan menu?

Agave syrup is plant-based and contains no bee products; therefore, it is the standard sweetener used as a substitute for honey in vegan menus. If you plan to label your menu as “vegan,” base your claims on the information provided on the product’s current packaging label and also verify the other ingredients in your supply chain.
