The reason is simple: the customer is a patient, and the menu is not a matter of choice but a part of treatment. That is why, in hospital food supply, what matters most is not the price, but that the product is consistent every time, verifiable, and delivered on time.

Santral Gıda has been providing corporate catering services since 1995; we make deliveries to all 39 districts of Istanbul six days a week using our own vehicles. Products that require a cold chain are transported in refrigerated vehicles.

A hospital kitchen does not have a single menu; it has parallel menus

A hospital kitchen prepares five or six different meals simultaneously for the same meal service. From the supplier’s perspective, this means that multiple variants of the same product group are needed at the same time—salted and unsalted, full-fat and reduced-fat, sugared and sugar-free.

Menu type

Key requirements for procurement

Normal (Standard) Menu

Volume and continuity; bulk packaging economy

Low-Sodium Menu

For salt-free or low-sodium options, sodium information should be clearly visible on the label

Diabetic Menu

Products with no added sugar, clear carbohydrate information

Soft/liquid menu

Purees, soups, and other easy-to-chew textures

Allergen-Restricted Menu

Gluten-free, lactose-free, and nut-free alternatives

Staff cafeteria

Separate menu, separate capacity, separate cost calculation

Making this distinction from the outset when preparing the order list eliminates the risk of preparing the wrong item in the kitchen. No product with illegible label information should be allowed into the diet kitchen.

Traceability: Why is a lot number required?

When there is a food-related complaint at the hospital, the first question asked is, “Which batch did this product come from?” For this reason, hospital kitchens record the lot number and expiration date of the received products; suppliers are also expected to keep the same records.

In practice, this means that deliveries must be traceable via the delivery note and that there must be no mix-ups regarding batches of the same product. If a product’s brand or source of supply is going to change, this must be reported in advance—the hospital kitchen will not accept the delivery of unannounced substitutes.

The cold chain must be verifiable, not just a claim

A break in the cold chain for dairy products, cheese, frozen foods, and meat products is not immediately apparent; the consequences become evident several days later. Since this risk is unacceptable for hospitals, measuring the temperature of the products upon delivery is standard practice.

We deliver products that require a cold chain using refrigerated vehicles. In this guide, we explain in detail how to manage the shelf life and storage conditions of frozen products.

Single-serving packaging and patient trays

It is preferable for the food served on a patient tray to be individually portioned and in sealed packaging, for both hygiene and portion control. For items such as jam, honey, butter, cheese, and crackers, single-serving packages are used; for main courses and soups, however, in-house preparation is the norm.

The second benefit of single-serving products is measurability: the amount the patient consumes is visible on the tray, which is important for monitoring nutrition. In our catalog, portion-sized items are available in the Breakfast & Deli and Cheeses categories; for example, 30 g portions of honey and 30 g portions of jam.

The hospital kitchen never closes—supplies must not run out either

A hospital is the only type of business that prepares three meals a day, 365 days a year. Restaurants may close, schools may go on break, and hotels have off-seasons; but in a hospital kitchen, none of that happens. When selecting suppliers, this means that the ability to ensure continuity is just as important as price.

Practical takeaway: Avoid relying on a single supplier for critical items and maintain a safety stock for those items. It’s up to the kitchen to determine which products are critical; our job is to plan for an uninterrupted supply of those items. Deliveries six days a week also leave room for needs that arise over the weekend.

How are contract-based and tender-based procurements planned?

Hospital procurement is typically conducted through term contracts or competitive bidding. Since prices must be locked in for the duration of the term under this model, it is crucial that the product list and estimated monthly quantities be clearly defined when preparing a bid.

Once you provide us with the product list and your projected quantities for the period, we’ll prepare a proposal that includes itemized pricing and suggestions for alternative products. In our recommendations for substitutes, we’ll also explain why a product is considered a substitute—in the dietary kitchen, simply calling it a “similar product” isn’t a sufficient justification.

The staff cafeteria is a separate matter

In most hospitals, the patient kitchen and the staff cafeteria operate under the same roof but follow different principles: there are no menu restrictions for staff, the volume is high, and economies of scale apply to bulk packaging. Managing both on the same order list is the most common cause of the wrong products being delivered to the dietary kitchen.

Since the concept of bulk meal service applies to the staff cafeteria, the packaging and portion cost calculations on our cafeteria and bulk meal supply page can be applied directly. Items for institutional use fall under the categories of Pasta, Grains & Legumes, Cooking Oils, and Canned & Jarred Foods.

Cleaning and Supplies: The Unseen Side of Kitchen Hygiene

In the hospital kitchen, cleaning supplies are procured with the same level of care as food. Dishwashing detergent, surface disinfectant, gloves, hairnets, and single-use packaging items are used regularly, and running out of them can bring the kitchen to a halt just as quickly as running out of food. This entire group is available in our Cleaning & Supplies category; they’re delivered in the same order and at the same time.

How do orders and deliveries work?

You place your order by phone, WhatsApp, or email; we prepare a quote based on the product list and quantities. Once you approve it, the order is added to the next day’s delivery route. We deliver to all 39 districts of Istanbul 6 days a week using our own vehicles; products requiring a cold chain are transported in refrigerated vehicles.

Since 1995, we have been exclusively serving corporate clients—we do not offer retail sales or online payments. Prices are determined on a quote basis, and special volume-based pricing is available for regular purchases.
